The history of quinoa is clearly rooted in South America, in the Andes region (Argentina, Bolivia, Chile, Columbia, Ecuador, and Peru). Along with maize, quinoa was one of the two mainstay foods for the Inca Empire that had its start around 1200 AD.

the following recipe is simple to make yet full of many complex nutrients that benefit any body at any age! This is an opportunity to add this recipe to your whole food nutrition meal plan. It’s a terrific add to any healthy diet.
Quinoa Corn & Avocado Salad
- 1½ cups cooked quinoa
- 1½ cups corn
- 2 medium avocados, diced
- 1 cup cherry tomatoes, halved
- ½ medium red onion, diced small
- ¼ cup chopped fresh cilantro
- Zest of 1 lime and 2 tblsp fresh lime juice (or a couple of drops of lime essential oil)
- 1 tblsp extra virgin olive oil
- Sea salt to taste
Combine everything in a large bowl and mix well.
Chill for an hour and serve with your favorite veggies and chips.
