Jody Mow Wellness shares this tasty healthy living recipe that will hopefully help you expand your family’s veggie options. After all, variety is the spice of life!

1 ½ cups parsnips, peeled and cut into bite-size chunks
1 large sweet potato, peeled and cut into bite-sized chunks
2 firm Gala or Fuji apples, peeled, cored and cut into bite-size chunks
1 red onion, cut into bite-size chunks
2 garlic cloves, lightly smashed
1 Tbsp. honey
2 Tbsp. balsamic vinegar
1 Tbsp. oil
Optional – rosemary or thyme
Salt and pepper, to taste
Prepare casserole dish – use parchment paper, oil spray, etc.
Preheat oven to 375 degrees.
In a large mixing bowl, place parsnips, sweet potatoes, apples, garlic and onion and set aside.
In small bowl, mix together oil (if using), honey and vinegar. Pour on vegetable and apple mix.
Toss to coat well.
Transfer to casserole dish, toss every 20 minutes or so until tender; approximately one hour.
